This is a corker of a winter warmer! Brilliant for batch cooking – chuck it all in the slow cooker, then let it do its thing. Portion up for the freezer and that’s an easy bunch of meals right there. Have it on its own, with some mashed potato, or a bit of crusty bread.
Ingredients:
Pack of 12 sausages (I like to use chipolatas and cut them into quarters, but whatever floats your boat).
2 x red peppers
3 x courgettes
Tin of butter beans
Tin of black beans
Tin of baked beans
Tin of kidney beans in chilli sauce
2 x tins of chopped tomatoes
Salt and pepper
Smoked paprika
Garlic
Method:
Chuck all the ingredients in the slow cooker and off ya go! Brown off the sausages first if you want, but I never bother.
