This is one of my fave dishes. Easy to make with only a handful of ingredients and super tasty.
It’s a nice one to do if you’ve got friends coming for lunch and great to batch and freeze.
Here goes…
Ingredients:
Chicken (I use a 750g pack of breast fillets)
Kimchi (I buy a 400g pot and put the lot in)
Spring onions (a few stalks, chopped)
Sesame oil (about a tablespoon)
Peanut butter (a good couple of big dollops – add or decrease to your preference)
Noodles
(You can add beansprouts and/or strips of pepper if you like).
Method:
- Cook your noodles, drain, and put to one side.
- Warm your sesame oil, then add chicken and cook through.
- Add your kimchi and fry off for a couple of minutes.
- Add your peanut butter and stir until melted.
- Add boiling water to loosen the sauce to your preferred thickness.
- Chuck in the noodles and the spring onions, stir, and serve.
See. So easy it’s ridiculous.
